Kim Chayul’s Myung Poom Kalbi

Kim Chayul included his name in his restaurant title as a way of attaching his pride to his restaurant. Mr. Kim believes that the quality of food is not all the same and so chose the word Myung Poom, which translates to luxury, to act as his motto for serving his food. Known for his signature thick-cut kalbi, his meat is meant to emulate cuts of steak drenched in his secret marinade which he has made daily for the last ten years.
In his interview, Mr. Kim reminisces of his early days working as a young kitchen staff at various restaurants, receiving his green card with the help of his old boss at Woochun restaurant, losing his house in Korea, living 4 years apart from his wife and 3 daughters, and finding happiness in stability and God.
